Well, grappling, when the competitors are only partly covered, and some have metal armor parts, is a good chance to get cut, stabbed, bashed and scraped, etc., and that may be why the leaders of the group are moving cautiously. If someone loses balance and falls, and the other falls, too, it can cause fairly serious injury. Go slow on that, and maybe limit to just grabbing the sword arm, and so on.

I suspect that when the fight came to that point, everything was legal for the originals, like knocking upward under the chin guard on the helmet, knees to the groin, elbows to the throat, kicks to the knees, etc. It wasn't just a game to them, it was survival once the fight began. So if it came to hand to hand, it was a pretty dirty fight, I'd bet.

We can simulate some of those things, though, without throws and leg sweeps, tripping, and toe stomping. The audience will like it, if you're performing for an audience. If you watch the ArsDimicandi videos, particularly the Provocators closely, you'll see many of the more forceful shield blows and such are not really meant to connect with the opponent. It's stage combat, along with some other moves. I don't know if everything is choreographed, but some apparently is.
