Hi guys/gals I am working on an illustration that has a large roman eagle statue in the background and I was wondering if any one knows of good examples of Roman eagles I can look at for imperation?

Which period?
I have some.
Here's one of the eagles above the apotheosis of Antoninus Pius and Faustina from his column base.
I also have an image from Titus' apotheosis from the Arch of Titus.

Theodosius,
Do you know the milieu of the eagle image you posted? It's quite impressive. Just the sort that inspired many of America's colonial artists...

I think at least some of them are probably inspired by ancient works of art. The 'Weary Heracles Plaque' looks to me to bear more than a passing resemblance to the Herakles Farness statue.
