Yes there are many types of linothorax (ancient word) and scales were applied to the outside of many but definatley not all.

The 16 layers were just sewn or glued also?
Bronze and Iron have differnt metalic qualities.
Have you tried bronze plate in the experiments?
That might explain the resistance of the phalanx or thessalian cavalry
