Maybe my idea of 'indespensible' is different, but the Roman world is so vast. These are some of my favorites from my bookshelves, but there are a lot more:

"A History of Private Life", Aries and Duby, Editors
"Roman Hospitality" by John De Felice
"The Jewellery of Roman Britain" by Catherine Johns
"The Artifice of Beauty" by Sally Pointer
"Numbering and Measuring in the Classical World" , W F Richardson (absolutely indispensible tretise on Roman concepts of mathmatics)
"Handspindles" Bette Hochberg
"The Warp Weighted Loom" by Marta Hoffman
"Roman Furniture" by A T Croom
"Roman Working Lives and Urban Living" by Ardle Mac Mahon and J Price
You should have sections for Trade, Business, Government, Art, Technology, Religion, Food, Jewellery, Crafts..probably more when I think of it.
