I don't think many people drank much milk at all until recent times. "Food for babies" and all that.Until Pasteurization it wasn't all that safe ,I don't think. You hear of much more wine consumption than even water.
As for sour wine,I'm no expert,but I think it was just a low quality that was consumed by the masses.The wealthier people got better as in most things.
