Hi there

there was onion ,leeks, carrots chick peas lentils barley.
The best recipe I tried was the quiche in the book written by J Edwards(apicius) the inside of the pan was thickly layered with green beans then there was a egg mixture with herbs (meat)then a layer of green beans then a layer of egg mixture and you cooked in the oven for 30min s then when it cooled it set firmly if you would like to have a go Ill send you the exact weights as I worked them out by trial and error but I would highly recommend you try it.
Like many types of breeding/crop improvement, some of these have changed over time. The carrot is a good example; the modern orange carrot is a hybrid of the (I'm told by Merlinia) very tuberous red and white carrots, both of which are rare today.
It is very hard to compare dog breeds; it seems from root evidence at Pompeii and other places you can come close to what the plants and vegetables were like.
