We all know that you can get a pretty good approximation of liquamen from Asian groceries under the name of Nuoc Mam or Nam Pla. Well, as I was stocking up with the stuff today (it comes in liter bottles) I ran across a sauce from the Philippines that lists the same ingredients, but is opaque, brownish-grey, and apparently contains pureed fermented anchovies. It is called 'Bagoong Balayan' and sounds to me like a pretty good approximation of the cheaper 'allec' made from the fish residue once the 'flos' of the garum is strained off. Maybe you can find it in your area, too. (The producer is Fitrite Inc in Quezon City, the European importer Heuschen & Schrouff OFT, Landgraaf, NL.<br>
