Roman-Lucanian Sausages

I intend to make about 10 pounds of this sausage. Has anyone tried this recipe. Any pointers? Should I leave out the fish sauce etc...? See link below.<br>

You can leave out the liquamen, but I wouldn't. Really you shouldn't use very much of it to start with, so it doesn't make too much of a difference if you use salt instead - that's the main point anyway, and I didn't like them too salty.<br>

If you can get them, using laurel berries rather than bay leaves is nice. And freesh herbs do make a difference (if you use dried it is a good idea to add a little liquid to the mix)<br>

And I don't need to tell you stuffing sausages is lots of work, do I?<br>

You'll never find garum, but Vietmanese fish sauce is pretty close. The berries can be problematic. Take a close look; I had sausage made up and the berries can be a problem<br>

At one of our Roman workshop/meetings I decided to open the bottle of nucman (Vietnamese -modern garum) I had just purchased. I cracked the metal cap/seal, not even opening a quarter turn and we had to clear out the garage! Pretty powerful stuff. One of the guys said that during 'Nam they could sight artillery to hit enemy positions from many clicks away just from the smell of nucman. (I can NOT confirm the veracity of that statement).<br>

I wonder if there is something milder that won't peel the chrome off my Dad's new sausage/meat grinder?<br>

Also, I'm a little stumped on the berries. Not sure if they sell them in the USA? What troubles did they give you when you tried? I read they are related to laurel berries and also wax myrtle. But when I looked up wax myrtle (which grows near my office) it only mentions using the berries for making candles… nothing about food.<br>

Pliny writes that if you use too much rue, you could cause an abortion. Rue is an abortifacient, but only in very large quantities. It is also quite bitter, so if you get near dangerous doses with a sausage you won't find anyone willing to eat them any more, anyway. Well-stocked herbalist stores should be able to sell it to you dried, at least in the UK. In Germany, it is a controlled substance for some reason and I don't know about the US. I got mine from www.baldwins.co.uk <br>

Bay berries are rarely if at all for sale, at least where I live. Try getting branches of bay leaves from spice shops or delis in season, they often still carry berries (plus, you can strip and dry the bark for spice and use the wood for incense or smoking).<br>

I'm trying to get hold of a mini bay tree for my windowsill. That may be the only option to get the real thing. <p></p><i></i>

Nuoc Mam and Nam Pla come in various degrees of revoltingness (I'm told there is a similar phenomenon with chili sauces which assures only people fromn near the border get their hands on adult chili). Try the stuff they sell to Falang, that is usually tamer. I got a bottle from an Asian deli a year ago and it has not yet killed anything or anyone. All else failing, you can always dilute it (but I'm told any surplus ought not be flushed if you value your drain seals)<br>
