I am curious as to how a Roman vegetable garden would be laid out. I've been using Google, but have not found any relevant details.

There are couple books on this, though I'm not at home to pull them off the shelf. Archaeologists have taken casts at Pompeii and know to some extent what kinds of plants there were and how they were planted.

I do recall something about how they tried to replicate the gardens at Fishbourne Roman Palace, there's an article here

Some years ago, I was at a talk given by a historically inclined profesional gardener on Roman Gardens. He illustrated his talk with slides of frescos from Pompeii. Don't know if this is of any help to you, but it might give you somewhere to start looking.
