That is a pretty big topic. If you are just looking for a list of occupations, perhaps you should check out craft guilds. Here is a supposed list of guilds. I don't know about their accuracy, though. Also, this list isn't comprehensive because we know of other guilds from other sources.
And, of course, these are just guilds. There were probably many occupations which either didn't or couldn't formally organise themselves. Just as an example, Trajan wouldn't allow one guild (firemen?) to be formed because he thought they could be used to organise unrest.

Thank you. I really want the answer to one question; What did they call aqueduct workers for a city? The latin job title.
