This isn't an area I've looked at closely much, but JP Wild has written an extensive number of studies of Roman textiles that might address what you are looking for. Otherwise, I know Carol van Driel-Murray examined the methods of stitching used to make military tents, but unfortunately, I can't remember the specific reference for the paper in which she describes the stitching techniques used for leather.
