I love the shape and sheen of ancient Terra Sigillata and I would like to know where I can buy modern dishes modeled on the Roman pottery?

The most authentic Southern Gallic ones you get here, because the are using clay from the same site as the Romans did: De Casas

You also get very nice repros from Andreas here on the forum:
