Draw weight for siege weapons

Hi,

How do most historians who replicate ballistas determine/test their initial projectile velocity and maximum draw weight for their machines?

Im also curious on modern ways (with physics) to determine optimal torsion skein dimensions (length and total diameter),arm length (which also relates to draw distance) and pre-loaded torsion/twist.
