Don't worry, John, I have found a butcher who will take care of the "grimy stuff", but not all will, so in the beginning and before you find an accommodating butcher you may be able to use those tips. Due to legal requirements, all butchering here in the Netherlands is done at the slaughterhouse, so you actually have to get a butcher to order you that part of the cow in the raw and then be willing to pre-process it.
