Centurions led their centuries more than commanded them. We must remember that Centurions were members of the rank and file, Primus Pilus actually means First File Leader (there is a separate disucssion of that), so even the most prestigious of the Centurions were expected to be fighters.

Yeah, I think Vegetius describes their helmet crests as being transverse.
