Nicholas Sekunda's Hellenistic Infantry Reform in the 160s BC, and his earlier, and hard to find, The Seleucid and Ptolemaic Reformed Armies, 168-145 BC have some info on Ptolemaic armies, mostly focusing on Sekunda's view that they were reorganized/reequipped/retrained on Roman lines.

The Seleucid Army: Organization and Tactics in the Great Campaigns by Bezalel Bar-Kochva focuses mainly on the Seleucids (obviously) but has good information on the important battles of Raphia and Panion.
