Hi,
Although a book that concerns the Middle Ages, Der Mittelalterliche Reiterschild from Jan Kohlmorgen, might be of help. If I remember correctly (as I don’t have a copy on my at present to verify this), he mentions various types of glues (most of them made out of natural materials) used for connecting the individual boards of a shield. It does not seem unlikely that a natural glue that is sufficiently strong for a shield, may also work on bone.
