Dr. Timothy Dawson's main field of interest is c900 - 1204, but he represents an excellent starting point for anyone interested in Byzantine Military History.
I've put together a large collection of images of Byzantine swords, but in the process, there have been many images of Byzantine Armour assembled too:

There you will find a large selection of images, a typology of swords and so on, and links to my site, I make primarily Byzantine reproduction swords.
This site will be of interest too, because it shows what some of the armours might have look like, and they have done a pretty convincing job of making depcitions of armours which were thought to be artistic abstractions look very much like they may have been realistic depictions:
