Good to see more people get involved in cavalry impressions.
The vindolanda fell boots are from the 2nd century, so a little bit early for a 5th century impression, but they are enclosed, so better then normal caligae anyway.
About the clothing materials and colours, I would suggest you to have a look at Graham Sumners new book ´Roman military clothing´ which should answer these questions.
