I make both Mulsum as well as Posca.

Mulsum is wine spiced with honey and herbs, Posca is plain water, a few drops of vinegar, honey and some citrus fruit. Works perfectly and is period ok.

tried it with apple cider, and balsamic vinegar. 4 cups of water, half of vinegar and then honey..

I know it is very difficult to buy. but "most" could be very good to make roman wine. Just ad water.

But well, currently there are a couple of wine-yards who make wines with 'Roman recipy', one even in the 'Roman way'. And I really like their wines, actually.
