I have got this documentary at home.
I must check but I think you can choose the language you want , at least english.
As far as colors are concerned they made the choice to show everything plain (all clothes are brown or beige, the stones and columns are unpainted and not decorated, aso).
To me it s a nineteenth century idealistic representation of ancient Greece close to the nature.
Nowadays I guess we have another perception of it which tends to consider (exagerating ?) it much more colorfull as we used to.
Without being too flashy or laquered I think we can go a bit further than them in the colour range !
